We need to be sure our egg supply is of the highest quality, unfortunately bacteria salmonella is present in a majority of eggs coming off of the large industrial chicken farms. I don’t hesitate to cook that way whan I know the source of my raw ingredients. Otherwise I err on the side of caution and make sure the yolks reach at least 165 degrees right before serving. Whenever I cook in a public festival forum such as we have I am pretty extra careful about good temperature control. Especially since this chef is not afraid to include extra rum in his rum free coffee while cooking; We’re all here to have a great time and food safety should be a prime directive we should all exercise.

eggs should be very easy to locate, with the economy as it is, there are a lot of people supplimenting there incomes by selling eggs. I have a friend that sells at our farmers market, give me an idea of how may doz. we need and I’ll give her a call? they are free range, and are fed organic food.
I’m with Hippie, it would be a major buzz kill to get the whole campground sick! cleanliness and food saftey are of utmost importance.

We always have a lot of folks at our camp for the “after dark” sets of the festival. Camp Run-A-Muck and Telluride Tom’s camp both have a clear view of the festival from the campground, and we have plenty of community space reserved for folks to hang-out and enjoy the festival music without going over to the festival grounds. Bring your own chair.
We typically have late-night feeds at Camp Run-A-Muck, too. I usually get back to camp with the munchies, dig into the coolers, fire-up the barbecue, and make quesadillas for everyone until the tortilla shells run out. Late-night parties at Run-A-Muck are the norm. We just have to get the pickers to come over!
So I want to bring those Choc., Maple Bacon cupcakes like I promised Ron awhile back. When should I take those to TP? I was just gonna bring em to the PJ party… Will they clash er what?

That’s right folks… Hooch is in charge of the Run-A-Muck bar-tent this Summer, and he’s our our all-time favorite festival bartender… well… except for Daniela… but she ditched us. Be fore-warned… Hooch will have you drinking stuff you’ve never heard of (like Crunchy Frog), and most likely will force you try bacon infused vodka. Just ask little Sarah what she thinks of the stuff… :rolleyes You da man, Hooch!

Be Warned: If it’s not clean it’s not getting out of any kitchen I may be working. For the last 2 year it’s been a MAJOR GOAL to make sure folks don’t get sick during Pre-Fest. So far… So good! :thumbsup If it’s fishy… or rotten eggy-ish, it’s a NO SERVE. I’m very encouraged that all are keeping the masses in mind while planning this event. Thanks to all that care!
