Thanks for the imput, Jerry! You’re advise is always well thought and wise. I do think the poacher thing is the way to go. I do prefer to rub the cups with butter rather than cooking spray, thought. I’m going to get two and figure this is going to be and annual pre-fest event from now on, so is money well spent. I do plan on this happening every year. I do have a feeling that Useless and Lala will be regulars after this year. Useless is doing the sauce this year and not sure what she/he has in mind for keeping it warm and serving. Got the chafing dishes (2), and figure with the poachers, (2 burners, only) will have extra burners for the asparagus and one to keep sauce warm. Yes, have two gas grills for toasting the muffins.
Benny’s, fresh baked goods, bacon for Hooch, melon and grog…what more can you ask for at 9 am in the morning? You know, Eggs benedict was created by a man with the last name Benedict in I think 1826 for a hangover cure!? If you want to do more eggs than 12 at a time you can just do them in a big skillet with the simmering water and a teaspoon or so of vinegar, and use a big slotted spoon to take them out of the pan. Adding salt to the water also helps it boil faster at elevation. Or you can cheat and just use over-easy fried eggs. :cheers
I love that you wrote that you did a recon at 4600’. It’s a bit higher in Telluride you know, but you’ve got the right attitude, so altitude shouldn’t be a big factor.
The eggs in the skillet with a little water and vinegar is a GREAT idea. Ya’ll are really on point! I will have an extra coleman double burner with me if any of the camps need a little extra heat for the breakfast feast. This is gonna be the best breakfast ever!!!

Whats the big deal? I produce Bennys all the time in the mountains of St. Louis. Our staggering elevation of 465 ft! :lol :lol :lol
Okay…Mine are a little smaller around and perfectly round, but come out p[erfect with nice runny yokes! Used my daughter and her friend a my test subjects and I got two thumbs up! Got water boiling in 4 minutes and eggs were done in another four. I can turn out 12 eggs, perfect, in 8 minutes or less.
Guess the time is 10 am, thought it was 9, but this will give the late night picker an extra hour of sleep. So…10am it is …bring you appetite! Benny’s are a great cure for an over-hang! Not to mention a good ballast for the Rum Balls later! :thumbsup

Anyone have a nice quality french -fry maker they can bring that we can borrow??? I talked Steve into bringing the fryer and we thought that fresh cut fries could be a good addition for the homebrew tasting and maybe potluck and well just as snacks…
Just a note:
I was one the phone with Jailhouse Rob as he was doing “recon” on the egg cooking. It was a BLAST! just to hear how excited he was as the eggs came out “prefectly”! I heard the girls in the background singing the praises of his cooking. What a joy to at least be a part of all this, even if it was only on the phone. Next time… and very soon!.. we’ll do it again in Town Park! :thumbsup
