In England, bacon comes in a few simple varieties: smoked or unsmoked, and also, thick or thin cut as well, you can only have so much choice :lol :lol :lol
In France on the other hand, bacon is not very popular, they like their pork dry cured in various shapes and sizes, from the jambon sec de montagne still on the joint that you hang in the pantry, to the different types of saucisson… but they never go further than rolling it in black pepper corns of throwing in a few olives or walnuts, but even that is considered extravagant :lol In other words: don’t mess with a french man’s meat! :lol

So far, there are details…Black Canyon foods ( we may want more stuff from them- they off organic food delivery)) will pick up in Denver and keep in her cold storage… She will be picking up the thurs before.She normally makes her delivery to Telluride on Weds so that would be June 10… I’ll assume there should be some Abgater’s there by then… It will be flash-frozen… It should be able to be kept on ice until used or does anyone have a contact with somewhere in Telluride that will hold for us in a walk-in? Another option, black canyon foods in located in Olathe- looks close to Montrose so perhaps someone can pick up from there closer to when needed…
It’s like ham. Have you eaten ham? If you’ve eaten ham then you’ve eaten Canadian bacon. But, conversely, if you’ve eaten Canadian bacon then you have NOT eaten real bacon. I think the term “Canadian bacon” came about due to the language barrier between ourselves and the French Canadians who were primarily traders back during the mid to late 1800’s. You know how French-speaking people are wink wink.
:lol :lol :lol :lol Errmm, yes, I have indeed already eaten ham, and it’s definitely nothing like english bacon, so therefore english bacon and canadian bacon are not similar at all… My guess is that english bacon and american bacon are more or less the same :thumbsup
