I used to work at the Jazz and Heritage festival and I can tell you this, you could perform surgery in their food service areas. They run a very tight immaculate ship in the food department. My friends - two days after Mardi Gras - said that this is the time of year they start thinking about what yummy food they have to remember to get each year. Crazy people.
